Eline Blommaert joined Paleo in 2023 with a determination to create innovative food ingredients that can change the world for the better.

As Discovery Lead, Eline excels in using her passion for genetic research and computational biology to discover new solutions and drive R&D breakthroughs. At Paleo, she leads the identification of novel targets for strain engineering and improved myoglobin production through omic approaches. She also works on host platform development and the search for novel bio-identical ingredients to replace animal products.

Before joining Paleo, Eline was active in the field of human health. She conducted genetic research on glycosylation defects at the Centre for Human Genetics (KU Leuven) during her PhD research and pursued a post-doc in bioinformatics at the IDIBELL Oncology research centre in Barcelona.

Eline then transitioned to the food tech sector by joining the food tech company Väcka as R&D Lead, where she focused on plant-based proteins for cheese alternatives. She successfully identified microorganism and plant-based substrate interactions that generate cheese aromas, leading to the launch of two new plant-based cheeses.

In her current role at Paleo, Eline combines her diverse skills to passionately contribute to the next generation of sustainable and ethical meat alternatives.
